Thanksgiving 2020.
Nov. 27th, 2020 08:14 pmThis was my Thanksgiving:

This is the first time I have ever cooked Thanksgiving dinner by myself start to finish, so I made brisket instead of turkey. It turned out pretty good! I basically made indoor barbecue with barbecue sides (except for the sweet potato cassarole, courtesy of my moms, who worked out a socially distanced delivery.)
Here is the recipe that I used:
https://www.foodnetwork.com/recipes/texas-oven-roasted-beef-brisket-recipe-1915431
Also pictured: mashed potatoes with fajita style bell peppers and garlic, coleslaw, baked beans, and bacon jalapeno poppers.
My depression and social anxiety are through the roof right now, but at least this worked out. The fact that I can make my own brisket is kind of dangerous. I may try to make ropa vieja next.
